Pastry Junior Sous Chef

We are seeking a highly skilled and experienced Pastry Junior Sous Chef to join our team at Marina Bay Sands. As a key member of our culinary team, you will be responsible for ensuring the highest standards of food quality, safety, and presentation in our pastry kitchen.
Key Responsibilities- Oversee the preparation and presentation of all pastry items, ensuring they meet our high standards of quality and presentation.
- Work closely with the receiving and purchasing team to ensure the quality and freshness of all raw materials.
- Monitor and control the production of pastry items to ensure they meet our recipes and specifications.
- Manage the timely preparation of mise en place for the next shift.
- Ensure a high level of hygiene and safety in the kitchen, adhering to all policies and procedures.
- Ensure that all kitchen staff adhere to our hygiene policies and procedures.
- Work closely with the hygiene manager and executive chef to maintain the highest standards of food safety.
- Maintain a clean and organized kitchen environment, ensuring that all equipment is properly maintained and cleaned.
- Report any maintenance defects to the culinary management team.
- Provide training and guidance to junior staff members to ensure they have the skills and knowledge to perform their duties effectively.
- Estimate food consumption and requisition raw materials to minimize waste and spoilage.
- Prepare daily work lists and train staff to prioritize tasks and manage their time effectively.
- Assist the Chef de Cuisine in providing daily briefings to the team, ensuring they are aware of any changes or updates.
- Attend Sous Chef meetings and communicate information to the team.
- Ensure a cooperative and professional working relationship with all external controls.
- Provide regular feedback to staff members on their performance, creating a positive and supportive work environment.
- Help maintain high productivity levels by monitoring duty rosters and organizing annual leave.
- Ensure that all staff members maintain high standards of grooming and customer service.
- Diploma in Pastry, Bakery, or Culinary Arts.
- Minimum 5 years of supervisory experience in a 4-5 star hotel or quality restaurant.
- Excellent leadership and supervisory skills, with a hands-on approach.
- Excellent logistical, culinary, and leadership skills.
- Able to instill safety and sanitation habits.
- Willing and able to work shift work.
- People and customer-oriented, motivator, and self-starter.
- Team builder, displays initiative, and creativity.
