Job Purpose
To prepare and deliver authentic Indian cuisine with consistency and excellence, covering North and/or South Indian dishes. The Indian Chef will ensure high standards of food quality, presentation, hygiene, and contribute to building the restaurant's reputation for authentic Indian dining.
Key Responsibilities
Cooking & Menu Execution
Prepare a wide range of Indian dishes including curries, kebabs, tandoor items, biryanis, breads, and/or South Indian specialties.
- Follow standardized recipes while maintaining authentic flavors.
- Support the Head Chef in designing specials and festive menus.
Consistency & Quality Control
Ensure dishes are prepared consistently with proper spice balance.
- Maintain portion control and minimize wastage.
- Present dishes to high standards for customer satisfaction.
Kitchen Operations
Manage mise-en-place for Indian dishes before service.
- Maintain proper storage and rotation of Indian spices, lentils, and ingredients.
- Operate and maintain kitchen equipment such as tandoor oven and dosa tawa.
Team Support & Training
Train junior chefs and helpers in Indian cooking methods.
- Work collaboratively with other kitchen sections to ensure smooth service.
- Assist in supervising line staff when required.
Hygiene & Compliance
Follow SFA food safety and hygiene standards.
- Maintain cleanliness of workstation and kitchen areas.
- Adhere to health & safety regulations during food preparation.
Skills & Competencies
- Proven experience as an Indian Chef in a restaurant setting.
- Strong expertise in Indian cooking techniques (North and/or South Indian).
- Knowledge of spice usage, flavor balancing, and traditional recipes.
- Ability to work in high-volume, fast-paced environments.
- Team player with leadership potential.
Key Information
- Reports to: Head Chef / General Manager
- Supervises: Junior Chefs, Kitchen Helpers (if assigned)
- Employment Type: Full-time, 6-day work week (incl. weekends & public holidays)
