Job Summary

We are seeking a highly skilled and experienced Senior Sous Chef to join our culinary team at 1-SPRING PTE. LTD. as the second-in-command, reporting directly to our Head Chef.

Key Responsibilities
  • Guest Experience: Ensure that guests receive an exceptional dining experience, representing true value for money.
  • Recipe Management: Ensure that all recipes and product yields are accurately costed and reviewed regularly.
  • Food Preparation: Ensure that all food items are prepared as per standard recipe cards, maintaining portion control and minimizing waste.
  • Sanitation and Safety: Comply with and enforce sanitation regulations and safety standards.
  • Leadership and Development: Make recommendations to the Head Chef regarding succession planning and fill in for the Head Chef in planning and directing food preparation when necessary.
  • Team Supervision: Supervise all stewards and their activities within the culinary department.
  • Administrative Tasks: Administer and file weekly work schedules and annual leave planners correctly.
  • Maintenance and Improvement: Initiate relevant maintenance reports and work orders, following up on actioned items.
  • Guest Feedback and Improvement: Work closely with the Operations Manager and teams to collect guest feedback and focus on improvement and development.
  • Work Environment: Create a positive and safe working environment for all employees.
Requirements
  • Experience: At least 4 to 5 years of relevant experience in Western or European cuisine.
  • Certifications: Completion of a Basic Food Hygiene course.
  • Leadership Skills: Fair and firm management abilities with high influencing skills.
  • Creativity and Innovation: Creative and innovative approach to all operational aspects.
  • Communication and Computer Skills: Excellent communication skills and basic computer skills.
  • Initiative and Motivation: Initiative and self-motivated individual.
  • Training and Coaching Skills: Ideal training and coaching skills.
  • Availability: Ability to work on weekends and public holidays in a fast-paced working environment.
  • Career Advancement: Candidates with experience may be considered for the Sous Chef position.
