About the Role

We are currently seeking a highly skilled and experienced Sous Chef to join our team at Marina Bay Sands. As a key member of our culinary team, you will be responsible for supporting the Executive Chef in the management of daily kitchen operations.

Key Responsibilities

  1. Support the Executive Chef in the management of daily kitchen operations, ensuring smooth and efficient service delivery.
  2. Maintain a high level of knowledge of scheduled menus, menu items, preparation methods, and quality standards.
  3. Display a strong commitment to food safety and hygiene practices, adhering to Marina Bay Sands' strict policies and procedures.
  4. Provide accurate recipes and training to line cooks to ensure consistent food quality.
  5. Assist with on-the-job training and mentorship of junior team members.
  6. Estimate food consumption and requisition raw materials to minimize waste and spoilage.
  7. Prepare daily work lists and train line cooks to produce mise en place efficiently.
  8. Maintain a cooperative and professional working relationship with the front-of-house team and external vendors.
  9. Promote a positive and productive work environment, fostering employee morale and productivity.
  10. Comply with Marina Bay Sands' hygiene policies and procedures, ensuring a safe and healthy working environment.

Requirements

  1. Degree or Diploma in Culinary Arts or Management.
  2. 7 years of managerial experience in a high-volume hotel or similar culinary environment.
  3. Knowledge of Asian and Western cuisines, preparation methods, and service standards.
  4. Excellent leadership, logistical, and culinary skills.
  5. Fluent in English, with knowledge of additional languages an advantage.
  6. Ability to work flexible hours, including shifts.
