Job Summary:
- We are seeking an accomplished chef with expertise in authentic Indian Manglorean cuisine to fill a key role within our kitchen team.
About the Role:
- The successful candidate will be responsible for preparing and presenting diverse Mangalorean and Chettinad dishes, showcasing their culinary skills and creativity.
- This position requires a strong understanding of traditional recipes, ingredients, and cooking techniques.
- The ideal candidate will have excellent time management skills, ensuring seamless kitchen operations during assigned shifts.
- Maintaining high standards of food quality, hygiene, and presentation is paramount.
- Additional responsibilities include overseeing daily menu development, managing inventory, and supervising junior chefs.
Key Responsibilities:
- Culinary Expertise: Prepare and present authentic Mangalorean and Chettinad dishes, such as Chicken Gassi, Neer Dosa, Sukka, Puli Munchi, Prata, Chettinad Chicken/Mutton Curry, Pepper Chicken, Kozhi Varuval, Nattu Kozhi Kuzhambu, Fish Fry, Crab Masala, Mutton Chukka, Kara Kuzhambu, Kootu, and Chettinad-style side dishes.
- Tandoori Cuisine: Prepare tandoori chicken, fish, and prawns, as well as seekh kebabs, malai tikka, and paneer tikka.
- Baked Goods: Naan, roti, kulcha, and other tandoor-baked breads.
- Menu Development: Develop a menu that reflects coastal Karnataka and Tamil Nadu flavors using seasonal and local ingredients.
- Kitchen Operations: Plan daily schedules and manage prep work, ensuring efficient kitchen operations.
- Quality Control: Maintain high standards of food quality, hygiene, and presentation.
- Team Management: Supervise kitchen staff and train junior chefs in traditional techniques and plating.
- Food Safety: Ensure compliance with food safety guidelines (SFA).
Requirements:
- Extensive experience in Mangalorean and Chettinad cuisine.
- Excellent culinary skills and knowledge of traditional recipes.
- Strong leadership and communication skills.
- Ability to work effectively in a fast-paced kitchen environment.
- Flexibility to adapt to changing menus and kitchen requirements.
- Possession of relevant certifications or qualifications in food safety and handling.
