Job Overview

The Executive Sous Chef will be responsible for overseeing the culinary operations of Marina Bay Sands, ensuring the highest quality of food products and services are delivered to our guests. This role requires a strong leader with excellent logistical, culinary, and leadership skills.

Key Responsibilities

  • Develop and implement menus that are exciting, balanced, and responsive to market trends.
  • Ensure compliance with local regulations and Marina Bay Sands' hygiene policies.
  • Conduct training and regular inspections to maintain high standards of food safety and sanitation.
  • Manage food costs and labor, ensuring budgetary goals are met.
  • Collaborate with the Executive Chef to develop and implement department policies and procedures.
  • Coordinate equipment needs and maintenance with the Executive Steward.
  • Estimate food consumption and requisition raw materials.
  • Maintain a good knowledge of industry trends and changes.
  • Investigate and resolve guest complaints in a prompt and professional manner.

Requirements

  • Vocational School or above.
  • At least 10 years of managerial experience in a high-volume 4-5 star hotel or casino operations.
  • Comprehensive culinary background with knowledge of Asian and Western cuisines.
  • Excellent logistical, culinary, and leadership skills.
  • Fluent in English, with knowledge of additional languages an advantage.
