Job Title: Senior Culinary Operations Manager

Job Summary:

We are seeking a highly skilled and experienced Senior Culinary Operations Manager to join our team. The ideal candidate will have a strong background in culinary arts, excellent leadership skills, and the ability to work effectively in a fast-paced environment.

Key Responsibilities:
  • Support the Executive Chef in managing daily kitchen operations, ensuring seamless food service delivery and maintaining high standards of quality, safety, and sanitation.
  • Oversee administrative duties, including team member management, payroll, records, scheduling, duty rosters, purchase requests, and market list orders.
  • Collaborate with the receiving and purchasing teams to control raw material quality and ensure compliance with company operating systems.
  • Maintain accurate recipes, plating guides, and menu preparation documents, as well as assist in menu development and implementation.
  • Monitor food production to ensure adherence to prescribed recipes and specifications, maintain high-quality presentation and portioning controls, and promote a culture of food safety and hygiene.
  • Train and guide culinary colleagues on equipment use, providing guidance on safe and proper handling practices.
Requirements:
  • Diploma or degree in Culinary Arts or related field, preferably with 7 years of managerial experience in a high-volume 4-5 star hotel or restaurant.
  • Comprehensive knowledge of Asian cuisines, preparation methods, and service standards, as well as familiarity with the latest culinary concepts and trends.
  • Excellent logistical, culinary, and leadership skills, with the ability to instill safety and sanitation habits, and adapt to changing priorities and demands.
  • Willingness to work shift hours, maintain high productivity levels, and prioritize tasks effectively.
  • Strong understanding of computer administration, basic accounting, and calculation of food costs.
