Job Title: Director of Banquet

At Accor, we are seeking a highly skilled and experienced Director of Banquet to join our team. As a key member of our hospitality team, you will be responsible for overseeing the daily operations of our banquet department, ensuring seamless execution of events, and delivering exceptional guest experiences.

Key Responsibilities:
  • Manage and coordinate daily Front of the House and Heart of the House operations, delegating tasks effectively to ensure smooth event execution.
  • Monitor event status and communicate with the culinary team to ensure timely and accurate delivery of food and beverages.
  • Plan and control manning to meet business needs and budget requirements.
  • Work closely with Talent & Culture to recruit suitable colleagues and develop a high-performing team.
  • Control outsource labour supply, casual labour, and overtime to optimize costs and efficiency.
  • Participate in regular BEO meetings with culinary, catering, and sales teams to ensure event organizer needs and expectations are met.
  • Communicate with the team during daily briefings and conduct monthly department meetings to drive performance and improvement.
  • Ensure regular training and re-training are conducted for casual employees to maintain high service standards.
  • Maintain service and function room setup standards, ensuring they are achieved and followed by the team.
  • Ensure hygiene and food safety compliance in the premise and related areas.
  • Implement, monitor, and maintain control measures impacting food costs, beverage costs, labour costs, and operating supply costs to stay within budget.
  • Lead the F&B team to personalize the guest dining experience with a heartfelt approach, ensuring delivery of the Service Promise.
  • Provide immediate attention to guest complaints and implement service recovery procedures to prevent future recurrence.
  • Work closely with the culinary team to maintain food quality, ensuring timely and accurate delivery and setup for all events.
  • Regularly review guest comments/VOG with the team and implement solutions for continuous improvement.
  • Provide necessary training and guidance to the F&B team to maintain high standards and quality of products and services.
  • Recruit, develop, and retain F&B team members who are competent and confident to exceed guest expectations and drive business success.
  • Support the F&B team in delivering consistent service, using a collaborative and enabling leadership style, and conducting regular team meetings.
  • Drive consistent service and process improvement, using the performance review process to identify and develop talent for growth and address performance issues.
Requirements:
  • Degree/Diploma in Hospitality Management.
  • 5 years of experience in F&B Management, with a strong background in banquet operations.
  • Experience in a similar size and style of 5-star hotel.
