The Wok 2 position plays a vital role in the kitchen, supporting the Head Chef to deliver exceptional Chinese wok dishes efficiently and promptly. This key role emphasizes maintaining consistency in food quality, speed, cleanliness, and adherence to safety and hygiene standards. To succeed, you must be highly adaptable, possess strong culinary skills, and embody our core values through teamwork, discipline, and a passion for continuous learning.
This includes:
- Working alongside the Head Chef to prepare high-volume wok dishes with precision and speed.
- Following strict recipes and presentation guidelines.
- Maintaining wok station cleanliness, equipment, and preparation of dishes and ingredients before service.
- Monitoring food temperatures and freshness to meet food safety standards.
- Practicing portion control and minimizing food waste.
- Receiving, checking, and storing kitchen supplies effectively.
- Collaborating with kitchen assistants and other cooks to maintain kitchen flow.
- Reporting any equipment or food safety issues to the Head Chef immediately.
To excel in this role, you will need:
- A minimum of 3 years' experience in a Chinese or seafood restaurant kitchen wok station, with training provided.
- The ability to work under pressure in a fast-paced environment.
- A strong understanding of wok techniques, heat control, and food timing.
- Basic knowledge of food hygiene and kitchen safety protocols.
- Physical fitness to stand for extended periods.
- Able to work 10 hours shifts (6 days a week), including weekends and public holidays.
