Manage the wok station and oversee daily stir-fry cooking operations.
Main Responsibilities:
- Create authentic Chinese dishes according to standard recipes.
- Maintain proper heat control, seasoning, and consistency of dishes.
- Develop daily menu items in collaboration with kitchen management.
- Supervise kitchen assistants and junior cooks, assigning tasks and ensuring workflow efficiency.
- Monitor quality of ingredients, manage food preparation, and ensure timely service delivery.
- Sustain a clean and safe kitchen environment, adhering to food safety standards.
- Assist in inventory management, including ordering and controlling waste.
Key Requirements:
- A minimum of 10 years of experience in Chinese cuisine, specializing in wok/frying station.
- Familiarity with various Chinese cooking techniques (stir-frying, deep-frying, braising, steaming).
- Ability to lead a kitchen team and train junior staff members.
- Knowledge of kitchen safety, food hygiene, and operational standards.
