Senior Culinary Operations Manager

We are seeking a senior culinary expert to lead our banqueting operations for weddings and catering events. The ideal candidate will have extensive experience in managing daily production, preparation, and presentation of high-quality cuisine.
This is a challenging role that requires strong leadership skills, attention to detail, and excellent communication abilities.
The successful candidate will oversee stock ordering, monitor job duties for junior colleagues, control labor and food costing, and ensure quality standards are maintained or improved.
Key Responsibilities:
- Administer and adhere to HACCP policies and procedures within the hotel.
- Supervise and maintain cleanliness and hygiene of your kitchen and all work stations.
- Ensure consistency in the preparation of all food items for A La Carte/Buffet/Festive menus according to hotel recipes and standards.
- Take responsibility for the quality and presentation of Chinese banquet and weddings events.
- Educate and train junior colleagues in accordance with hotel brand standards to foster productivity.
- Work with superiors to plan appropriate manning levels, ensuring effective utilization of manpower and labor cost.
- Actively share with superiors the conduct and work performances of junior colleagues; ideas and opinions.
- Ensure new colleagues/trainees are properly trained, provide guidance and support when needed.
- Liaise daily with banquet managers to keep effective communications regarding guests' feedbacks and improve on it.
