Responsibilities:

  • Prepare a wide variety of sushi dishes to meet customer demands
  • Manage and train sushi kitchen staff and other kitchen staff, including scheduling and assigning tasks
  • Ensure the correct preparation, presentation and delivery of sushi dishes, and check them for quality
  • Maintain inventory and control food waste to ensure profitability
  • Ensure compliance with food safety regulations and maintain a clean and hygienic kitchen
  • Provide exceptional customer service, maintaining a positive relationship with customers and their requests
  • Assist in maintaining in-house and online menus, making changes as necessary
  • Continuously develop and refine sushi and other menu offerings to meet customer and business needs

Qualifications:

  • Certification in Culinary Arts, Japanese Cuisine, or a related field is preferred.
  • Minimum 2-5 years of experience in a sushi bar, Japanese restaurant, or fine dining establishment.
  • Apprenticeship under an experienced Sushi Chef is an advantage.
  • Expert knife skills for slicing fish and preparing sushi rolls with precision.
  • Deep understanding of traditional Japanese sushi preparation techniques.
  • Knowledge of food safety and hygiene standards (HACCP, ServSafe, or local regulations).
  • Ability to identify and handle fresh seafood to ensure the highest quality.
  • Creativity in developing new sushi menu items while maintaining authenticity.
  • Strong attention to detail in plating and presentation.
  • Ability to work in a fast-paced kitchen environment while maintaining efficiency.
  • Strong communication and teamwork skills to collaborate with kitchen staff.
