About the role

Assistant Hygiene Manager

As an Assistant Hygiene Manager, you will play a pivotal role in leading and maintaining the highest standards of cleanliness and hygiene throughout the hotel. You will oversee all hygiene-related activities, ensuring compliance with statutory requirements and Four Seasons policies by implementing a robust Hygiene (Food Safety) Management System. What you will do

You will be planning and driving hygiene-related activities, as well as conducting audits and reporting. Accomplishing the key duties, such as:

Risk Assessment and Advisory : Collaborate with the F&B and Housekeeping teams to identify hygiene-related risks within the hotel's operations. Provide strategic advice on resource allocation to address the highest-risk areas.

Compliance and Action Plans : Implement and enforce action plans to ensure compliance with hygiene and food safety legislation, aligning with the hotel’s hygiene and food safety objectives. Lead and organize regular internal hotel inspections, including F&B areas, to assess hygiene conditions. Issue internal audit reports and recommend corrective actions for non-conformance, if any. Establish a regular monthly schedule for bacteriological and chemical testing of food and water samples. Record and implement corrective actions for failed sample results, if any. Assist F&B management in investigating food safety-related feedback, if any.

Monitoring and Verification : Support management in verifying adherence to hygiene and food safety practices, policies, and procedures. Continuously monitor and update the Food Safety Management System.

Regulatory Inspection: Facilitate hotel visits from local government officials or other organizations related to food safety, hygiene, and pest control.

Review and Documentation : Ensure the effectiveness of all HACCP/Food Safety Management System documentation and procedures, especially in response to food safety feedback. Conduct and host monthly HACCP meetings to review the performance and improvement of the Food Safety Management System. Ensure meeting minutes are maintained.

Follow-up Actions : Verify and review follow-up actions by various departments to ensure they align with recommendations from internal audits, third-party audits, and inspections by government officials, if any.

Training : Conduct and coordinate hygiene and food safety briefings and training sessions for new joiners and current employees. Liaise with external trainers for relevant training programs such as RSPH food safety training and Ecolab chemical training, etc.

Safety Committee Support : Actively support the Safety Committee and Lost Workday Case (LWC) Committee.

What you bring:

Degree in Food Science, Food Technology, or equivalent experience in Hygiene & Food Safety.

Minimum 3-4 years of related experience in a similar capacity in the related position with Four Seasons or other food and beverage organisations, preferably in a luxury brand.

Familiar with all the hygiene-related legislation in Singapore and experience working closely with the relevant government authority.

Experience in establishing and implementing of Food Safety Management System (FSMS), HACCP and ISO 22000. Experience in conducting internal audit and reporting.

Requires knowledge in F&B operations, cleaning chemicals, kitchen and service equipment.

Excellent Interpersonal and communication skills to drive and influence various stakeholders.

Proficient in Microsoft 365

Ability to adapt well in a fast-paced environment

This position requires the incumbent to work from Mondays to Fridays, 8.30 am to 6.00 pm, subjecting to work exigencies.
