Job Summary:

The Pastry Chef de Partie is responsible for preparing, producing, and presenting high-quality pastry, bakery, and dessert items in line with the restaurant's standards. This role requires creativity, precision, and the ability to work efficiently in a fast-paced kitchen environment while maintaining consistency and quality.

Key Responsibilities

  • Prepare and produce a wide range of pastry and dessert items, including breads, cakes, tarts, chocolates, petit fours, plated desserts, and other sweet products.
  • Assist in menu planning and contribute creative ideas for seasonal and signature pastry offerings.
  • Ensure all mise en place is prepared, organized, and ready for service.
  • Maintain the highest standards of food quality, taste, and presentation.
  • Follow recipes, portion control, and plating specifications as directed by the Pastry Sous Chef / Head Pastry Chef.
  • Ensure proper storage, labeling, and rotation of ingredients in compliance with food safety and hygiene standards.
  • Maintain cleanliness, organization, and sanitation of the pastry section and equipment.
  • Assist in training and mentoring junior pastry staff and apprentices.
  • Monitor stock levels, report shortages, and help with inventory control.
  • Adhere to all health, safety, and hygiene regulations in accordance with company and government standards.

Job Requirement

  • Proven experience as Pastry Chef de Partie or in a similar role within a fine-dining or high-volume establishment.
  • Strong knowledge of pastry techniques, chocolate work, bread making, and modern dessert trends.
  • Creativity and passion for pastry arts with a keen eye for detail.
  • Ability to work under pressure and maintain consistency during busy service periods.
  • Strong organizational and time-management skills.
  • Ability to work effectively as part of a team while taking ownership of assigned tasks.
  • Food & Hygiene certificate will be an added advantage.
