**Roles & Responsibilities**
- Responsible for planning, directing, controlling, coordinating, training and participating in the food preparation and daily kitchen culinary activities and required standards and specifications
- Create and update menus based on customer preferences, and cook different varieties South Indian Dishes seasonal ingredients, and regional Indian cuisine.
- Stay updated on current culinary trends, new ingredients, and cooking techniques specific to Traditional South Indian cuisine
- Weighing, measuring, mixing, and prepping ingredients according to recipes.
- Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation
- Ensure timely and safe production of cooked foods, adhering to regulatory requirements
- Train and mentor kitchen staff in Indian cooking techniques, flavors, and traditional recipes.
**JOB DESCRIPTION**:
Manage the day-to-day kitchen operations, including ingredient inventory, ordering, and stock control.
Ensure the proper use, cleaning, and maintenance of kitchen equipment used in Indian cooking.
Implement and enforce food safety and sanitation regulations, ensuring a clean and hygienic kitchen environment.
Collaborate with suppliers to source authentic Indian ingredients while managing costs effectively.
Conduct regular inspections to ensure the quality, taste, and presentation of Indian dishes.
Implement standard operating procedures to maintain consistency and authenticity in Indian cuisine.
To cook different varieties of South Indian Dishes Chettinad dishes.
Manage operations, budgeting, food and labour costing, forecasting, stock control, resource planning, staffing, inventory and waste management
Taking stocks and liaise with the purchase & catering managers to ensure the adequate food items are available to produce the appropriate menu items
Storage of raw materials and ingredients and ensure that all the food storage and preparation of all food items meet the temperature guidelines.
Check the quality of raw and cooked food products to ensure that the standards are met
Actively participate in the kitchen training, including on the job training and support junior staffs and trainees in their development
Ensure compliance to regulatory of food safety, quality, health and hygiene standards at all times.
