Job Summary

We are seeking a highly skilled Culinary Operations Director to lead our kitchen team at The American Club. This is an exciting opportunity for a dynamic leader to oversee the culinary operation, ensuring exceptional dining experiences and high-quality food.

About the Role

The Culinary Operations Director will be responsible for designing menus that reflect our brand's culinary identity, meeting customer preferences, and staying aligned with industry trends. They will ensure the menu evolves based on seasonal ingredients, local sourcing, and cost-effective planning.

Key Responsibilities
  • Menu Planning and Development:
    • Create innovative menus that meet customer expectations and stay relevant in the market.
    • Source high-quality, seasonal ingredients and develop recipes that showcase our culinary expertise.
    • Collaborate with the management team to ensure menu offerings align with business goals and customer preferences.
  • Food Quality and Presentation:
    • Maintain high standards of food quality across all dishes, ensuring consistency in taste, presentation, and portion size.
    • Lead the development of new dishes, concepts, or culinary techniques to keep our menu fresh and exciting.
    • Foster a positive and professional environment in the kitchen, encouraging teamwork, creativity, and efficiency.
  • Staff Management and Leadership:
    • Manage and train a team of chefs, cooks, and kitchen staff, providing guidance, mentorship, and leadership to maintain morale and productivity.
    • Develop and implement effective scheduling and labor management strategies to ensure adequate coverage for kitchen operations.
  • Cost Control and Budgeting:
    • Oversee the kitchen's budget, managing food costs, and minimizing waste. This includes tracking inventory, ordering supplies, and ensuring proper storage of ingredients and prepared foods.
    • Work with the management team to ensure the kitchen's financial health by balancing food quality with cost-effectiveness.
  • Health and Safety Compliance:
    • Ensure the kitchen operates with the highest hygiene standards, including cleanliness, safe food handling, and equipment sanitization.
    • Implement procedures to prevent contamination, cross-contamination, and ensure proper storage of ingredients and prepared foods.
    • Maintain compliance with local health codes, food safety regulations, and occupational safety standards.
    Requirements
    • Estimate Salary: $80,000 - $110,000 per year, depending on experience and qualifications.
    • Education: A culinary degree or equivalent experience in a senior culinary role.
    • Skills: Strong leadership and communication skills, ability to manage budgets and control costs, knowledge of food safety and sanitation practices, and experience with menu planning and development.
    • Experience: At least 5 years of experience in a senior culinary role, preferably in a luxury hotel or resort setting.
