Supporting Successful Operations

  • Work with the Management team to address guest feedback, suggesting improvements to internal SOPs.
  • Drive projects with internal stakeholders, including capital projects, company-wide campaigns, and maintenance initiatives.
  • Ensure adherence to Responsible Service of Alcohol protocols.
  • Contribute to key priorities, such as productivity, training, and workplace safety.
  • Lead a culture of compliance, emphasizing high ethical standards and active participation in Sustainability and CSR initiatives.

Driving Wine Program

  • Lead a team of wine specialists, developing a distinctive wine program that differentiates the outlet.
  • Regularly refresh the wine program to maintain relevance and excitement.
  • Work with Procurement and suppliers to maintain a robust portfolio of spirits, including Chinese baijius, sakes, and rare whiskies.
  • Collaborate with the Executive Chef and General Manager to review and update wine offerings.
  • Review inventory and maintenance of wine-related equipment, ensuring smooth delivery of quality wine service.
  • Build relationships with regional and global wine suppliers and distributors, maintaining a portfolio of distinctive wines.
  • Support talent development through extensive training programs for team members in wines and spirits.
  • Stay up-to-date with the latest developments in wines and spirits, serving as a primary source of knowledge.
  • Ensure wine and spirit stocks are used, stored, and accounted for in accordance with Company policies and procedures.
  • Communicate with sommeliers from other outlets, sharing new offerings and industry training platforms to elevate the property's wine program.

Job Requirements

  • Minimum 5 years of managerial experience in F&B, preferably in fine-dining establishments, including experience as Head Sommelier or Sommelier.
  • Relevant qualifications under the Court of Master Sommeliers, WSET, or equivalent preferred but not mandatory.
  • Robust knowledge of international wines.
  • Comprehensive F&B operational skills and practical wine service know-how.
  • Can-do spirit, thinking outside the box, and a willingness to innovate.
  • Ability to manage complexity and a dynamic working environment.
  • Proficient in basic accounting, budgeting, and inventory management skills.
  • Strong leadership skills and ability to motivate team members.
  • Well-groomed, professional appearance.
