  • Lead daily bakery operations, ensuring consistency in quality, taste, and presentation.
  • Mentor and guide the bakery team, promoting collaboration and performance improvement.
  • Manage the production schedule, working closely with colleagues to meet sales and operational targets.
  • Develop and maintain recipes, SOPs, and quality standards.
  • Oversight of ingredient inventory management, regular stock checks, and ordering for uninterrupted production.
  • Monitor product costing and pricing, ensuring alignment with cost-to-price mark-up standards.
  • Promote new products through trials and obtain approval.
  • Ensure adherence to company policies, hygiene standards, and operational procedures.
  • Drive resource efficiency, waste reduction, and innovation in production.
  • Maintain a safe, clean, and organized work environment in line with food safety regulations.

Requirements:

  • Proven experience as a Head Baker or Senior Baker in a commercial or retail bakery setting.
  • Strong technical knowledge of baking techniques, dough preparation, and baking equipment.
  • Excellent leadership, mentoring, and communication skills.
  • Sound understanding of product costing, pricing strategy, and inventory control.
  • Ability to manage staff performance and enforce policies when necessary.
  • Creativity in new product development with attention to customer trends and preferences.
  • Well-organized, reliable, and able to work under pressure in a fast-paced kitchen environment.
  • Physically fit and able to handle the demands of a production kitchen environment.
