Job Scope

The Sous Chef will play a pivotal role in ensuring the smooth operation of our culinary department. Key responsibilities include:

  • Supporting the Executive Chef and team in maintaining high standards of food quality, presentation, and service.
  • Managing administrative duties, including team member management, payroll, records, scheduling, and purchasing.
  • Assisting in menu planning, recipe development, and plating guides.
  • Collaborating with the receiving and purchasing team to ensure raw material quality standards.
  • Ensuring food safety and quality, adhering to company standards and regulations.
  • Monitoring food production to ensure compliance with recipes and specifications.
  • Leading by example, promoting a culture of safety, sanitation, and excellence in food preparation.
  • Providing training and guidance to line cooks to ensure consistent food quality.
  • Estimating food consumption, scheduling purchases, and requisitioning raw materials.
  • Minimizing food waste and spoilage, aligning with budgetary constraints.
  • Preparing daily work lists and training line cooks in mise en place techniques.
  • Providing daily briefings to team members, informing them of important updates and changes.
  • Maintaining high productivity levels, efficiently managing duty rosters and annual leave.
  • Ensuring high standards of grooming and customer relations.
Job Requirements

To be successful in this role, you will need:

  • Vocational school or higher education.
  • At least 7 years of managerial experience in a high-volume 4-5 star hotel or restaurant.
  • A comprehensive culinary background, with expertise in Asian, Western, Italian, and Japanese cuisines.
  • Knowledge of the latest culinary concepts and techniques.
  • Proficiency in using computers for administrative tasks.
  • Basic accounting and food cost calculation skills.
  • Excellent logistical, culinary, and leadership skills.
  • Able to instill safety and sanitation habits.
  • Willingness to work shift schedules.
