Job Title:

A Senior Fish Procurement Specialist is required to join our team. The ideal candidate will have a strong background in seafood handling and preparation, with excellent organizational and communication skills.

Roles and Responsibilities:
  • Ensure daily station setup is completed efficiently by implementing streamlined procedures and utilizing available resources effectively.
  • Inspect fish and shellfish for quality and freshness by conducting regular visual inspections and sampling.
  • Receive seafood, follow proper storage practices, and maintain a clean and organized station by adhering to health and safety regulations and implementing good housekeeping practices.
  • Monitor food quality at all times and enforce food safety protocols by participating in regular audits and training sessions.
  • Improve skills continuously by attending industry conferences, workshops, and online courses to stay up-to-date with the latest trends and best practices.
  • Display and store food at correct temperature conditions by utilizing modern equipment and following recommended guidelines.
  • Scale, gut, fillet, and cut fish according to kitchen specifications by following standard operating procedures and maintaining accurate records.
  • Follow safety procedures when handling sharp knives and machinery by wearing personal protective equipment and adhering to safety protocols.
  • Pack, label, and store fish and seafood products safely by utilizing tamper-evident packaging and following HACCP principles.
  • Fabricate, process, and portion whole fishes by utilizing specialized equipment and following established recipes.
  • Clean and cut fish, seafood, and shellfish by utilizing hygienic practices and following safe cutting techniques.
  • Verify fish and seafood freshness and quality by conducting regular taste tests and visual inspections.
  • Weigh, package, and label fish by utilizing electronic scales and following labeling regulations.
  • Perform additional duties as required by participating in cross-functional teams and contributing to process improvements.
  • Clean and sanitize equipment, walls, tables, and floors by utilizing sanitizing agents and following cleaning schedules.
  • Maintain kitchen equipment, track inventory levels, and order supplies as needed by utilizing inventory management systems and following procurement protocols.
  • Record sales and inventory for reporting purposes by utilizing accounting software and following financial regulations.
  • Operate, clean, and maintain kitchen equipment by following manufacturer instructions and adhering to maintenance schedules.
  • Stock counter neatly, inform management of low quantities or supplies, and implement Seafood certification programs by utilizing inventory tracking systems and following quality control procedures.
