We are searching for a Culinary Director who will serve as the face of Permata, leading its culinary vision while ensuring top-tier kitchen operations, customer satisfaction, and business growth. The right candidate will be a culinary leader, an expert in Southeast Asian cuisine, and a strategic thinker with strong PR and marketing acumen.

Role Overview:

As Culinary Director, you will be responsible for overseeing the entire culinary operations of Permata, ensuring excellence in food quality, kitchen efficiency, and guest experience. You will work closely with the marketing, operations, and management teams to elevate the brand's positioning while driving innovation in Nusantara cuisine.

This role requires a visionary leaderwith immense culinary knowledge, a strong business acumen, exceptional people management skills, and outstanding PR capabilities. You will also be responsible for food costing, market research, supplier management, equipment planning, and customer engagement.

The Culinary Director will be an ambassador of Permata Singapore, representing the brand in events, media interactions, and industry collaborations.

Key Responsibilities:

Culinary Leadership & Menu Innovation

  • Lead the culinary vision for Permata, ensuring a balance between heritage, authenticity, and modern innovation in Malay, Indonesian, and Thai cuisine.
  • Develop seasonal menus, signature dishes, and limited-time offerings that enhance customer experience and drive sales.
  • Ensure dishes maintain the highest quality, consistency, and authenticity while meeting contemporary dining trends.
  • Stay updated with global food trends and incorporate innovative techniques into traditional Nusantara flavors.

Kitchen & Operations Management

  • Oversee daily kitchen operations to ensure efficiency, hygiene, and high performance.
  • Be an expert in kitchen equipment and technology, ensuring the proper use, maintenance, and procurement of kitchen tools.
  • Implement and uphold food hygiene, safety, and sanitation standards in compliance with Singapore regulations.
  • Maintain strong knowledge of inventory management, food ordering, and kitchen workflow optimization.

Food Costing & Supplier Management

  • Develop and maintain cost-effective recipes while maintaining quality and profitability.
  • Work with suppliers to negotiate pricing and secure the best ingredients for Permata's menus.
  • Optimize ordering and food storage processes to reduce wastage and improve cost efficiency.

People Management & Team Leadership

  • Lead, mentor, and inspire a diverse team of chefs, kitchen staff, and culinary professionals.
  • Conduct regular training and skill development sessions to ensure the team maintains high performance.
  • Create a positive and collaborative kitchen culture, encouraging innovation and excellence.
  • Implement structured performance reviews and improvement plans for kitchen staff.

Brand Representation, PR, & Marketing Collaboration

  • Be the face of Permata, engaging with media, influencers, and industry experts to promote the restaurant's culinary excellence.
  • Collaborate with the marketing team to develop food-centric promotions, chef-driven campaigns, and brand storytelling initiatives.
  • Represent the brand at food festivals, industry events, and media features, reinforcing Permata's reputation.
  • Engage with guests, hosting VIP experiences and ensuring top-tier customer service.

Market Research & Business Strategy

  • Conduct regular market research on competitor pricing, menu trends, and customer preferences in the Malay/Nusantara food space.
  • Provide insights on new business opportunities, innovative dining experiences, and operational improvements.
  • Develop strategies for enhancing customer experience, increasing footfall, and optimizing profitability.

Required Qualifications & Skills:

10+ years of experience in the culinary industry, preferably in high-end Malay, Indonesian, or Thai cuisine.
Proven experience as Culinary Director, Executive Chef, or Head Chef in a reputable fine-dining or progressive dining concept.
Extensive knowledge of Southeast Asian (Malay, Indonesian, Thai) cuisines, food heritage, and contemporary culinary trends.
Strong expertise in food costing, inventory management, and kitchen operations.
Exceptional leadership and people management skills—ability to mentor and inspire a diverse team.
A deep understanding of F&B equipment, kitchen workflow, and process optimization.
Ability to work closely with marketing teams, contributing to brand storytelling and PR campaigns.
Outstanding public relations (PR) and customer engagement skills, comfortable representing the brand in media interviews, food events, and culinary showcases.
Strong market awareness, including competitor analysis, pricing strategies, and consumer trends.
Highly organized, detail-oriented, and able to handle high-pressure environments with a problem-solving mindset.
