Located within the luxurious Mondrian Hotel, our new location opening in November 2024 will offer an elevated dining experience that marries traditional techniques with a sophisticated atmosphere.
We are seeking an experienced and passionate Sous Chef with a strong background in Japanese cooking techniques to join our team. The ideal candidate will work alongside an experienced Japanese chef and play a crucial role in maintaining the high standards of our woodfire yakitori offerings, ensuring consistency, quality, and excellence in every dish.
Key Responsibilities
- Assist the Executive Chef in overseeing daily kitchen operations, including food preparation, cooking, and plating.
- Lead and manage kitchen staff, ensuring effective training, supervision, and motivation.
- Ensure consistent quality and presentation of dishes, meeting our restaurant's high standards.
- Maintain high standards of hygiene, food safety, and sanitation in accordance with health regulations.
- Manage inventory, order supplies, and control food costs to maximize profitability.
- Collaborate with the team to innovate and improve recipes and cooking methods.
- Contribute to menu development and design, incorporating authentic Japanese techniques and flavors.
Qualifications
- Proven experience as a Sous Chef or in a similar role, with a strong background in Japanese cuisine and techniques.
- Experience working with woodfire cooking methods is highly desirable.
- Excellent leadership and team management skills.
- Creative mindset with a passion for culinary excellence and innovation.
- Ability to work in a fast-paced environment and under pressure.
