Role Summary
The Bar Manager will be responsible for overseeing all aspects of the bar operations at Fi Woodfire Thai. The role includes leading the bar team, crafting the beverage program (cocktails, wines, spirits), ensuring excellent customer service, managing inventory and costs, and ensuring compliance with all regulatory, health, and safety standards.
Key Responsibilities
- Lead, train, coach, and motivate the bar team (bartenders, bar backs) to deliver high standards of service and maintain guest satisfaction.
- Design, develop, and update the drink menu: craft signature cocktails, suggest seasonal specials, pair drinks with food menu offerings.
- Ensure consistency in drink quality, presentation, portion sizes, and service times.
- Oversee opening and closing procedures for the bar.
- Monitor and manage inventory of all bar supplies: liquor, wine, beer, mixers, garnish, glassware, etc.
- Work with purchasing to negotiate with suppliers for best pricing and maintain relationships.
- Maintain cost controls: track costs, reduce wastage, manage theft and shrinkage.
- Control and manage bar labour costs while ensuring adequate staffing during peak hours.
- Maintain cleanliness and safety of the bar area, ensuring compliance with health & safety, liquor licensing, hygiene, and other regulatory standards.
- Ensure compliance with licensing laws and responsible alcohol service.
- Monitor and manage customer feedback, resolve service issues promptly.
- Forecasting: prepare projections for drink sales, staffing needs, inventory.
- Reporting: track key bar metrics (sales, forecasts, inventory, labour, cost margins) and report to senior management.
- Maintain up-to-date knowledge of beverage trends, competitor offerings, and customer preferences, and adapt offerings accordingly.
Requirements & Skills
- At least 3-5 years of bar or beverage management experience in a full-service restaurant or upscale bar, ideally in a high footfall setting.
- Strong knowledge of cocktails, wines, spirits, beer, and non-alcoholic beverages.
- Demonstrable experience designing drink menus.
- Excellent leadership and people management skills; ability to train and mentor a team.
- Great communication and interpersonal skills; customer service oriented.
- Strong organizational, planning, and time-management skills.
- Ability to work under pressure and in a fast-paced environment.
- Financial acumen: able to manage budgets, control costs and margins.
- Knowledge of regulatory compliance (liquor licensing, health & safety)
- Food & Beverage certification or related qualification is a plus.
