Junior Pastry Chef (Japanese Pastry & Desserts) – Central Kitchen Join our Central Kitchen team as a Junior Pastry Chef, focusing on authentic Japanese pastries and desserts. You will produce high-quality items to supply our company-owned Japanese café, strictly following recipes and standards set by our Japanese Head Chef and working closely with him day-to-day. Key Responsibilities Produce a range of Japanese pastries and desserts (e.g., roll cakes, cream puffs, castella, rare cheesecake, chiffon, wagashi-style items) according to the Japanese Head Chef's recipes and SOPs Execute daily mise en place, scaling, baking, filling, glazing, and finishing to café-ready standards Maintain consistency in taste, texture, and presentation across all batches Coordinate with the Japanese Head Chef on production plans, timelines, and quality checks Support new product trials and seasonal items under the Head Chef's guidance Handle equipment safely (mixers, ovens, blast chiller) and perform basic maintenance/cleaning Label, date, and store ingredients and finished goods; follow FIFO and food safety protocols Assist with inventory: receiving, stock rotation, and reporting shortages or variances Keep work areas clean and organized; uphold hygiene and safety standards at all times Meet daily production targets and delivery schedules for the café supply Requirements 1–2 years of pastry/bakery experience; Japanese-style pastry experience is an advantage Ability to follow detailed recipes, SOPs, and quality standards precisely Solid basics in sponges, choux, custards, creams, mousses, and gelatin-based sets Strong attention to detail and consistency under time pressure Team player with good communication; comfortable taking direction from the Japanese Head Chef Willingness to work early mornings, works as required Food hygiene awareness; certification is a plus Nice to Have Familiarity with Japanese ingredients and flavors (matcha, yuzu, kinako, black sesame, azuki)Basic piping and finishing skills for café presentation Basic Japanese language understanding for kitchen terms (optional)What We Offer Competitive salary and benefits Training and mentorship from the Japanese Head Chef Growth opportunities within our pastry team Staff discounts at our Japanese café Location Central Kitchen (supplying to our company-owned Japanese café)Only shortlisted candidates will be contacted.
