Job Scope

Commitment to Service Excellence

  1. Ensure food production adheres to the flow from delivery to guest plate, maintaining control over step-by-step preparation.
  2. Collaborate with receiving and purchasing on daily operations, controlling raw material quality standards.
  3. Guarantee food quality according to established standards, ensuring all items are in perfect sanitary condition and adhering to 'First in First out' kitchen best practice.
  4. Monitor food production to ensure compliance with prescribed recipes and specifications, adhering to food presentation, production, and portioning controls.
  5. Manage timely pre-preparation before rush hours and next-day 'Mise en Place' requirements.

Hygiene / Safety / Maintenance

  1. Ensure strict adherence to hygiene policies on a daily basis, relentlessly checking and controlling cooks applying all standards in place.
  2. Provide uncompromising support to the hygiene manager and executive chef to achieve the highest level of food safety requirements in all kitchens.
  3. Maintain high standards of cleanliness and sanitation in and around culinary work areas, ensuring colleagues clean their stations after every service.
  4. Ensure safe and proper use of equipment at all times, instructing colleagues accordingly.
  5. Report maintenance defects to culinary management using proper procedures.

Training / Development

  1. Provide accurate recipes with necessary training to line cooks, ensuring consistent food product delivery. Assist individuals with job functions and on-the-job training as needed for optimal customer service.
  2. Estimate food consumption to schedule purchases and requisition raw materials, minimizing waste and spoilage in line with budget.
  3. Prepare efficient daily work lists and train line cooks on producing 'Mise en Place' with priority and time management sense.

Environment / Communication

  1. Support the Chef de Cuisine in providing daily briefings to inform team members of important items, changes in procedures, new operating policies, or general interest information.
  2. Attend Sous Chef meetings and pass on information to culinary colleagues.
  3. Ensure a cooperative and professional rapport with all external controls.
  4. Foster a cooperative working climate, maximizing productivity and employee morale.
  5. Coordinate with the main kitchen, pastry, and butchery to ensure sufficient supply of high-quality 'Mise en Place' for the next shift.
  6. Undertake additional duties and responsibilities outside the normal daily/weekly routine but within the overall scope of the position.

Staffing / Employee Engagement

  1. Provide constant feedback to employees on their job performance, creating a work environment valued for trust and transparency.
  2. Help maintain high productivity levels through efficient monitoring of duty rosters relevant to business needs, organizing and planning annual leave accordingly.
  3. Maintain high standards of grooming for oneself and subordinates, ensuring good customer relations are maintained at all times, particularly in public areas of the hotel.
  4. Demonstrate a positive attitude and take pride in one's work, reflecting in the product produced for our guests.
  5. Ensure timely reporting to work according to culinary department schedules, reporting sickness or absence using correct procedures.

Job Requirements

  1. Diploma in Pastry, Bakery, or Culinary
  2. Minimum 5 years of supervisory experience in a 4-5 star hotel or quality restaurant in a similar capacity
  3. Excellent leadership and supervisory skills with a 'hands-on' approach
  4. Excellent logistical, culinary, and leadership skills
  5. Able to instill safety and sanitation habits
  6. Willing and able to work shift work
  7. People and customer-oriented, motivator, and self-starter
  8. Team builder, displays initiative, and creativity
