Roles & Responsibilities

The Head Chef (Chinese Dim Sum) assures us that the standard and quality of food production and hygiene in the kitchen operation department are always at the highest level. This role is very hands-on, requiring attention to detail and a positive work attitude. Reporting to the Operation Manager, the main tasks include:


Supervising and preparation of all food:

· Ensure food is prepared according to requirements

· Ensure timely production of meals and sufficient availability for all areas

· Maintain stock levels of kitchen supplies

· Prepare daily order items as per the menu

· Be available for functions to oversee food preparation and service


Overseeing and supervising all kitchen staff:

· Ensure staff understand their duties and expectations

· Train new staff in necessary skills

· Assign duties based on menu requirements

· Monitor kitchen staff to ensure tasks are completed properly

· Provide feedback for staff development

· Resolve staffing issues promptly and fairly


Managing kitchen stocks:

· Minimize wastage by supervising food preparation methods

· Use proper storage methods to prevent food loss

· Oversee stock ordering and control levels

· Inform purchasing department to replenish the stocks as per approved Halal Vendor Lists


Ensuring catering staff work safely:

· Ensure staff follow safe work practices

· Assist in kitchen cleaning at the end of shifts

· Maintain cleanliness and hygiene at all workstations


Assisting the Operation Director:

· Manage the Kitchen Operation Department in the director's absence

· Support daily kitchen operations

· Perform additional tasks as needed

· Monitor food cost budgets to control costs effectively
