Job Responsibilities:
A head chef at ITOKO RESTAURANT - a Japanese Restaurant is responsible to overseeing the restaurant kitchen operations, menu planning, supply management, quality control and ensuring the highest quality of Japanese cuisine is prepared and served. This includes but not limited to:
- Menu planning - design, create and refine menus with new or existing Japanese food specialises in sushi and omakase meals.
- Assist in developing seasonal menu and dishes, monitor production of seasonal food items / ingredients as to ensure the team - other chefs are in compliance with the prescribed recipes and specifications.
- Food preparation - maintain excellent standard of food quality, and production. Addition, to assess and approve finalise dishes before service to ensure presentation and taste meet quality standards.
- Kitchen management - Must know how to manage food cost, minimise waste and maximise through usage of food through proper and well-organised storage.
- Team leadership - maintain highest standard of kitchen and food hygiene at all tiimes, resolve kitchen issues promptly to maintain smooth operations and foster a positive efficient kitchen environment.
- Ensure safe and proper use of equipment at all timesand to give guidance to other team members.
- Overall in charge of the kitchen team duringthe absence of the Restaurant Operational Manager to build a high performing team.
- Any other duties as assigned.
