Role Overview
The F&B Manager at LLMG will take full ownership of all front-of-house operations across our restaurant, juice bar, café, and home nutrition offerings. This individual is responsible for ensuring seamless service, premium guest experience, and the commercial performance of our F&B vertical.
This is not your average F&B management role. You will work cross-functionally with culinary, medical, nutrition, operations, and marketing teams to deliver a hospitality experience rooted in wellness, education, and empowerment. You will play a pivotal role in team development, customer engagement, and business scalability, aligning food operations with our mission of supporting members across their six lifestyle medicine pillars.
You will report hardline to the Head of Strategic Operations, with a dotted line to the Head Chef, and collaborate closely with the Head of Operations and other department leads.
**Key Responsibilities**:
Operational Leadership & FOH Excellence
- Lead and manage all FOH operations, ensuring smooth, premium, and consistent guest service across the restaurant, café, juice bar, and takeaway offerings.
- Drive excellence in hygiene, food safety, reservation handling, order flow, and service standards.
- Collaborate with BOH to ensure seamless integration between kitchen and floor.
- Own the operational effectiveness across all F&B zones, introducing systems to improve turnaround time, accuracy, and guest satisfaction.
People & Culture Development
- Recruit, train, and inspire a high-performing FOH team aligned to our values and brand promises.
- Create structured onboarding, coaching, and performance development frameworks to nurture future leaders.
- Model and embed a culture of hospitality, presence, and personal responsibility.
- Conduct regular service evaluations and calibrate standards across shifts.
Guest Experience & Education
- Champion a warm, knowledgeable, and efficient guest experience rooted in wellness.
- Empower FOH staff to be educators—helping guests understand the benefits behind every dish or beverage.
- Ensure every customer touchpoint reinforces LLMG’s purpose and brand.
- Address guest feedback with professionalism and empathy, using insights to improve systems.
Menu Strategy & Nutritional Alignment
- Collaborate with Head Chef, Nutritionist, and Dietitian to develop beverage and takeaway offerings that align with our six lifestyle medicine pillars.
- Provide input on seasonal menu updates and educate FOH staff to ensure alignment with evolving offerings.
- Support development of educational tools like menu cards, nutrition guides, and suggested pairings.
Sales & Business Development
- Drive revenue across all F&B arms—including dine-in, juice bar, café, and home meal subscriptions.
- Be the expert on membership offerings and recommend tailored options to guests.
- Collaborate with marketing and programming teams to execute initiatives that increase sales and engagement.
- Provide weekly and monthly sales insights to leadership and contribute ideas to enhance profitability.
Strategic Operations & P&L Ownership
- Manage departmental budgets, control labour and COGS in alignment with Head Chef and Strategic Ops team.
- Recommend strategies to reduce waste, optimise purchasing, and improve margins.
- Participate in forecasting, budgeting, and reporting cycles as a key business stakeholder.
- Oversee vendor relationships, POS systems, and order management for FOH.
**Requirements**:
**Qualifications & Experience**:
- Minimum 5-7 years of F&B leadership experience, ideally within wellness-driven hospitality, boutique hotels, or health-focused concepts.
- Proven ability to lead and scale front-of-house teams while maintaining service excellence.
- Strong commercial acumen with experience managing P&L, cost control, and sales strategy.
- Clear understanding of dietary trends, guest education, and personalised hospitality.
