**Overview**:
This role is responsible for the coordination of the culinary department, including food safety reporting and training administration, employee onboarding, stock control, cash handling, event delivery and reporting, menu updates. This includes coordination of services and support personnel.

**Key Responsibilities**:
**Administration and HR**
- Input the culinary team schedule using the Time Management System (TMS), Roubler.
- Daily approval and maintenance of culinary leave records and daily shifts using the company e-leave system.
- Assist culinary team members with e-leave system login and initial setup.
- Manage department petty cash.
- Maintain staff uniforms and inform the supplier of;
- Staff on leave (more than 2 weeks) to avoid overcharging
- Shortages of uniforms
- Resigned staff returns
- Create and submit forms including disposal forms, incident reports, IT requests, etc.
- MBS security pass administration: creation, renewal, and replacement due to loss or damage.

**Safety**
- Maintain culinary safety records in accordance with HACCP standards.
- Record daily temperature checks.
- Record all food hygiene and training certificates; maintain the audit file.
- Liaise with HR enrolment of all team members food hygiene courses.
- Maintain risk assessments and ensure sign-off for all new team members.
- Manage allergen guides and internal communications.

**Culinary Administration**
- Assist with recipe creation for new menu items.
- Update current and new recipes on a daily basis.
- Maintain and update Micros and the Supy system.
- Input daily transfers and wastages, including food sales transfers.
- Manage recipe linking and updates.
- Update month-end inventory records for stocktaking.
- Generate food menu/recipe costing reports for the Chef.
- Coordinate recipe updates from the kitchen team.
- Culinary notice board; update with relevant information such as daily events, menus, costings, food portions of set menus, calendar leave, etc.
- Create and maintain Food Bible.
- Create and maintain dietary matrix for all food menus.

**Menu and Events**
- Key in event transfers to ensure accurate depletion via Oracle.
- Print and share Event Orders with the culinary team.
- Provide updates on menu changes, ingredients, and prices to all departments.

**Qualifications**
- Minimum 1 year of experience in a similar role.
- Proficient in Microsoft Excel.
- Good knowledge of Micros (POS).
- Proficient in Microsoft Office (Word, PowerPoint, etc.).
- Able to manage tight deadlines and be adaptable to changing work requirements.
- Flexible, firm, friendly, and approachable.
- Excellent spoken and written English.
- Willing to learn.
- Projects a professional outlook and a can-do attitude. Must be discreet and maintain confidentiality regarding information encountered in the course of work.
