Do you live and breathe amazing drinks? Do you get excited about creating experiences people will remember? We are looking for a Club Beverage Manager to lead our beverage offerings, from fine wines and whiskies to creative cocktails and refreshing non-alcoholic delights.
This is not just about managing operations (though you will do that with flair). You will host unforgettable wine dinners, lead whisky tastings, dream up creative promotions, and collaborate with our F&B and Events teams to make every sip an experience to remember. Key Responsibilities
· Lead daily beverage operations across bars, restaurants, lounges, and events, making every sip memorable.
· Maintain exceptional standards for beverage presentation, storage, and service.
· Ensure compliance with all liquor handling policies and government regulations.
· Curate beverage menus, including wine lists, whisky programs and speciality cocktails.
· Host tasting sessions, sharing the stories and flavours behind each wine and whisky, turning every sip into a memorable experience.
· Build and maintain a premium selection of wines, whiskies, and speciality spirits.
· Partner with the Events team to design unique beverage experiences for Club events, banquets, and social gatherings.
· Monitor beverage cost of sales, inventory, and wastage to keep operations efficient.
· Prepare and review monthly beverage performance reports, highlighting trends and opportunities.
· Collaborate with the Director of F&B to set sales targets and implement strategies to achieve them.
· Ensure smooth beverage service at events, including staffing, setup, and logistics.
· Create innovative beverage promotions that elevate member experiences and drive revenue.
· Lead, mentor, and inspire bartenders, mixologists, and beverage service staff.
· Conduct regular training and hands-on sessions to improve service standards and product knowledge.
· Train the team on wine, whisky, food pairings, and service techniques in an engaging, hands-on way.
· Perform any other duties assigned by the F&B Director to support overall F&B operations and service excellence.
Requirements
· Diploma or Degree in Hospitality Management, Food & Beverage, or a related field.
· Minimum of 5 years in beverage operations, with at least 2 years in a managerial capacity.
· Strong knowledge of wine, whisky, and mixology; WSET or equivalent certification preferred.
· Demonstrated success in planning and executing beverage-related events such as wine dinners, whisky tastings, and promotional activities.
· Strong leadership skills with the ability to coach, inspire, and motivate a team in managing budget, cost control, and variance reporting.
· Ability to work evenings, weekends, and public holidays as required by operations.
