Based in Singapore, we are looking for a passionate and energetic individual to join us as **Executive Chef **for the pre-opening team of Pan Pacific Orchard.
**Responsibilities**:
The Executive Chef is responsible of all culinary activities to ensure efficiency and high standards of operations in all restaurants, bars and banquet. He / she is tasked to ensure culinary presentation and quality, driving high levels of guest satisfaction through the consistent execution of all brand standards, while ensuring revenue and profit maximization.
- Responsible for the setting up the Culinary Division, including the recruitment of the pre-opening team, establishing policies and procedures and ensuring that the critical path of the Culinary Division is completed in a timely manner for the opening.
- Responsible for all culinary activities to ensure efficiency and high standards of operations in all restaurants, bars and events.
- Continually review and refresh menu offerings as deemed.
- Communicate the hotel strategies to the culinary team in an effective manner (where appropriate).
- Ensure supplier audits and tracking is completed regularly.
- Create new revolutionary standards of product offering through an innovative, passionate, hands on approach.
- Conduct regular hygiene audits in conjunction with the Chief Steward and the department heads of the kitchen team and ensure that the hotel complies to the local requirement of food hygiene and certification.
- Lead the culinary team in proper expenses and cost control with required services and standards and monitoring the performance of all the department in this process.
- Establish integrated cost management plan related to daily inventories and market list produce.
- Create, implement and control performance standards for kitchen and stewarding to minimize operating equipment breakage and stream line efficient resource flow.
- Interact with media and guests to promote the culinary offerings of the hotel and to conceptualize and deliver innovative promotional events.
- Develop and grow the culinary team through leadership, mentorship and coaching to fuel the growth of the team and of the Pan Pacific Hotels Group.
- Ensures active implementation and adherence to culinary brand standards and as appropriate, present new standards of operation for PPHG Corporate Office review.
- Providing advice and assistance on operational policies and procedures to all Associates and managers as required.
**The Person**:
- Minimum 8-10 years relevant experience in similar role in international hotel brands.
- Has strong pre-opening experience of hotel of similar set up.
- Spanish Cuisine experience is a must
- A current Executive Chef of a large hotel with experience in high volume restaurants and large banqueting.
- Strong conceptual design and kitchen planning skills.
- Experienced in handling kitchen operations, with a strong focus in revenue generation.
- Able to manage diverse relationships, i.e. Multi-Cultural / Racial teams as well as local communities.
- Someone with high energy and engaging personality.
- Experience in Asian market.
