There is an immediate vacancy for a full time **Executive Chef **for a Fine dining Indian Cuisine Restaurant in Singapore conceptualized by **Spice & Smoke Pte. Ltd. **If you are passionate about the restaurant industry and have required experience, then we want to hear from you.
- The Executive Chef will report to the Directors.
- The chef should have thorough knowledge and experience in handling high tech and latest kitchen equipment and appliances.
- Demonstrated knowledge of current restaurant industry trends
- Always prepared and ability to bolster customer interaction with a smiling face by being an active listener and solution focussed positive personality.
- Able to implement impeccable Food Safety Management System as per food safety compliance requirement by Singapore Government, for the food safety & hygiene standards.
- Ensure that the kitchen and surrounding areas are sanitized and clean in accordance with company standards and health code regulations
- **_Ability to prepare cuisine from different parts of India, with special attention to modern and traditional West Bengal cuisine, Rajasthani cuisine, Oria cuisine, North Indian cuisine along with different type of kebabs in oven, grill and tandoor, various types of Biryani. _**
- Must be able to design and create new menus and have innovative approach to styling the food presentation with attention to details, as per restaurant theme.
- Able to create fusion foods that combines contrasting culinary traditions or techniques into a single dish, either regional or international.
- Assigning prices to dishes and services based on production costs and cooking processes. Creating new recipes based on availability of ingredients depending on seasons, festivals and new gourmet trends.
- Ability to multi-task in a high-volume kitchen with effective time management, while always maintaining the order flow to patrons with best quality food.
- Ability to guide & train other kitchen staff and implement safe working practices, clean & healthy work habits to avoid work place injury and accidents.
- Supervising Kitchen activities and promoting teamwork amongst kitchen staff to ensure optimum service and that customers’ needs are met.
- Managing administrative operations:
- Keeping track of financial statements and records to ensure safe-keeping;
- keeping track of food, ingredient and beverage stock and place order as required;
- managing and submitting periodic reports to management regarding costs and expenses;
- kitchen equipment repairs or purchases for the kitchen to run smoothly;
- maintaining kitchen staff duty roster
