Head Chef – Lion Brewery Co Reports to: Head of Business Operations Type: Full Time Start: Immediate Lion Brewery Co is a craft-focused brewery and taproom built around exceptional beer, great food, and the pursuit of the best of times. We are looking for a Head Chef who believes that a kitchen is a high-performance team, and who cares deeply about flavour, consistency, profitability, and operational excellence. Role Overview The Head Chef leads the culinary vision, food quality, and kitchen performance at the Lion Brewery Co Taproom. This role is responsible for menu creation, cost control, operational leadership, and delivering a best-in-class food experience that matches our brand and enhances guest satisfaction. Key Responsibilities Lead all kitchen operations with a standard of excellence in execution, consistency, hygiene, and pace. Maintain and improve food quality, flavour standards, product consistency, and plating across all service periods. Design and evolve menus (subject to MD approval) that pair well with our beers, the feel of the venue, and mark us out as a pub with outstanding food. Manage COGS targets, procurement strategy, supplier relationships, waste control, portioning, and margin optimisation. Work proactively on cost savings without compromising quality or experience. Implement efficient kitchen processes, prep systems, and SOPs to maximise output during high volume periods. Own food safety compliance, kitchen cleanliness, and licensing standards. Recruit, train, coach, schedule, and mentor kitchen staff to build a strong, professional, motivated kitchen culture. Collaborate with bar leads + events team on specials, collabs, and event menus. Innovate for campaigns, wine dinners, tap takeovers, and brand storytelling moments. Requirements Prior Head Chef or Senior Sous Chef experience in a high volume, quality-focused kitchen. Deep understanding of food costing, menu engineering, portion control, labour efficiency, and profitability management. Strong work ethic; comfortable working long hours in a potentially stressful environment Strong understanding of supply chain, vendor negotiations, and food cost visibility. A passion for producing excellent food, caring about the little details, and never sacrificing quality for speed. Strong leadership presence – calm, organised, good under pressure, and can inspire the kitchen team, and ensure they are doing their jobs to the best of their abilities. Works well with cross-functional stakeholders under a growing beer brand. Knowledge / passion for beer is a plus. What Success Looks Like Food costs and margins exceed budget targets, while maintaining excellence of quality. Consistency improves month over month and guest satisfaction increases. A high-performing kitchen team who are proud of the food they produce.
