Job Description Brewery Setup & Operations Lead the full setup of the brewery, including layout design, equipment selection, installation, and commissioning. Work with suppliers and contractors to ensure all equipment meets operational, safety, and regulatory requirements (NEA, SFA, etc.). Develop Standard Operating Procedures (SOPs) for brewing, sanitation, quality control, and maintenance. Production & Recipe Development Design and produce a core range of house brews that pair seamlessly with the restaurant's wood-fired cuisine. Create seasonal and experimental brews to keep the menu fresh and engaging. Manage brewing schedules, fermentation, cellaring, filtration, and packaging. Ensure consistent quality and adherence to recipes and production standards. Quality Control & Compliance Implement and oversee quality assurance systems across all stages of production. Maintain detailed brewing logs and records for traceability and auditing. Ensure compliance with all food safety, hygiene, and alcohol licensing regulations. Team Leadership & Training Recruit, train, and lead the brewery team (assistants, cellar staff, etc.). Foster a culture of safety, craftsmanship, and continuous improvement. Collaborate closely with the restaurant and bar teams to align product offerings and service training. Innovation & Brand Development Work with the marketing and operations teams to develop the brewery's brand identity and storytelling. Participate in collaborations, festivals, and public engagements to build brand visibility. Provide technical input for packaging design, product launches, and promotional materials. Requirements: Minimum 5–7 years of professional brewing experience. Prior experience as a Head Brewer / Lead Brewer / Senior Brewer. Experience in brewery setup, commissioning or managing a production brewery is an advantage. Strong knowledge of brewing science, fermentation, recipe development, yeast and quality control. Familiar with brewery equipment, cellar operations, packaging (kegs, cans, bottles), and safety protocols. (Preferred but not mandatory)Diploma / Degree in Brewing, Fermentation Science, Food Science, Chemical Engineering, or related field.
