Job Title: Executive Chef Assistant

Job Description

We are seeking a highly skilled and experienced Executive Chef Assistant to join our culinary team at Marina Bay Sands. As an integral member of the kitchen operations, you will be responsible for supporting the Chef de Cuisine and Sous Chef in running daily kitchen operations.

You will train Chef de Partie and Commis to understand kitchen standards and hygiene-related topics, ensuring that all team members adhere to stringent hygiene standards. Your role will also involve managing stocks for daily mise en place production, placing food orders, and conducting regular checks during goods receiving to ensure quality meets expectations.

A key aspect of this position is equipping yourself with knowledge of food & safety hygiene policy, color labeling, recording of food temperature, and being well-versed in handling kitchen equipment. You must commit to serving and producing high-quality food standards, applying 'First in First out' best kitchen practice, and adhering to stringent hygiene standards.

Your responsibilities will include ensuring food production follows the flow from delivery to guest plate, being in control of step-by-step preparation, and complying with hygiene policies on a daily basis. Additionally, you will ensure safe and proper use of equipment at all times, instructing this to all culinary colleagues, and providing accurate recipes with appropriate training to line cooks to deliver consistent food products.

You will assist individuals with their job functions and on-the-job training when necessary to ensure optimum service to customers, estimate food consumption to schedule purchases and requisition raw materials, minimize waste and spoilage to expenses, and foster a cooperative working climate maximizing productivity and employee morale.

This role requires excellent logistical, culinary, and leadership skills, as well as a willingness and ability to do shift work. A comprehensive and diverse culinary background with a well-developed set of skills to cope in a large, diverse kitchen and restaurant environment is essential.

The ideal candidate should have a minimum of 5 years of supervision position experience in a 4-5 star hotel or quality restaurant, with certification in Culinary. Good knowledge in Western Cuisine is also required. A well-groomed and professional appearance is expected.
