Culinary Team Leader

We are seeking a highly skilled and experienced Culinary Team Leader to join our team at Raffles Hotel Singapore. As a key member of our culinary team, you will be responsible for overseeing the effective and professional operations of our assigned kitchen, ensuring smooth and effective communication amongst the kitchens and other departments, and managing the conduct of subordinates.
Key Responsibilities- Food Quality and Safety
- Monitor and maintain the highest standards of food quality and safety in our kitchen, ensuring that all food presented to our guests meets our quality standards.
- Supervise and monitor kitchen operations, including yield testing, product identification, and proper rotation and labeling of food products.
- Conduct daily spot checks to ensure all food items are utilized completely to avoid wastage.
- Work closely with receiving and storeroom teams to ensure that goods received meet our quality standards.
- Cost Control
- Ensure food portioning, serving, requisitions, and receiving from stores are properly controlled in line with our Standard Operating Procedures to minimize wastage.
- Update menu recipe costing and menu planning as required, as well as for F&B promotions.
- Hygiene and Sanitization
- Ensure personal hygiene and grooming meet Raffles Hotel Singapore standards, National Environmental Agency standards, and HACCP guidelines.
- Enforce the highest standards of cleanliness, hygiene, and sanitation in our kitchens, including working areas, equipment, and utensils.
- Training and Development
- Responsible for the induction and onboarding of new hires.
- Ensure colleagues are trained in and comply with hotel rules and regulations, workplace safety and health procedures, hygiene, HACCP standards, and emergency procedures.
- Leadership and Management
- Oversee the effective and professional operations of our assigned kitchen.
- Ensure smooth and effective communication amongst the kitchens and other departments.
- Manage the conduct of subordinates and follow through with any employee grievances when necessary.
- Minimum Professional Certificate in a Culinary-related field.
- Minimum of 3 years of relevant experience in the Food & Beverage industry (hotel and free-standing restaurant) in a similar position, preferably in a reputable establishment or celebrity chef restaurant.
- Proficient in written and conversational English.
- 5-day work week.
