Wine Service and Operations Manager

Key areas of responsibility:

  • Oversee the opening and closing procedures, including the preparation of mise en place for the lounge or clubroom operations.
  • Ensure that junior and senior team members are following correct orders of service.
  • Assist where needed and provide guidance on how to improve performance and efficiency.
  • Attend mandatory meetings in the absence of the Head Sommelier and participate in all service briefings while on duty.
  • Develop and implement plans for each service, allocating Sommeliers to their respective roles and stations.
  • Ensure consistent standards of service across all floors and tables.

Responsibilities include overseeing the floor and all tables currently in service, communicating effectively with other managers on shift, and addressing any mistakes or complaints related to wine service promptly and efficiently. Additionally, you will be responsible for managing and overseeing Club events, member events, and private events, as well as assisting the Head Chef and Head of Events with wine pairings.
