Culinary Operations Leader

Job Summary:

The Culinary Operations Leader will oversee the overall culinary operations of a luxury hotel and Swissotel property. This includes menu planning, food production planning, quality assurance, operational precision, and administration/supervisory activities.

Key Responsibilities:

  1. Craft High-End Menus: Develop sophisticated, high-end menus that showcase culinary creativity and use of premium ingredients.
  2. Collaborate with Chefs: Work with chefs to create unique signature dishes that embody luxury and exclusivity.
  3. Maintain Culinary Excellence: Establish and maintain the highest standards of culinary excellence, ensuring a consistent and unparalleled dining experience.
  4. Streamline Kitchen Operations: Streamline kitchen operations to reflect the precision and efficiency expected in luxury & large-scale dining.
  5. Supervise Culinary Department: Supervise culinary department, delegating and assigning duties and responsibilities to ensure accurate and timely production of all catering events.

Requirements:

  1. Strong Leadership Skills: Possess strong leadership qualities, sound judgement, decision-making and problem-solving skills, and high integrity.
  2. Computer Skills: Strong working knowledge of computer systems, Microsoft Office, and procurement/requisition modules.
  3. Regulatory Knowledge: Knowledge of NEA & MOH regulations in Singapore.
  4. Labor Laws: Knowledge of labor laws and visa requirements in Singapore.
  5. Presentation Skills: Good presentation and influencing skills.
