Job Description

The Food and Beverage Service Executive plays a pivotal role in ensuring the highest standards of service excellence in our esteemed restaurant. As a proactive, interactive, and reactive leader, you will empower your team to deliver exceptional guest experiences, exceeding expectations at every turn.

We are seeking a highly skilled and experienced professional to join our team at Raffles Courtyard, where you will be responsible for overseeing daily operations and achieving targets. Your expertise will be instrumental in driving sales, improving efficiency, and maintaining the highest levels of service quality.

Key Responsibilities
  • Oversee the set-up and operation of a station/section in a restaurant, ensuring seamless execution and exceptional guest experiences.
  • Supervise and participate in running an efficient and profitable operation in the assigned areas, driving sales and improving efficiency.
  • Assist the Outlet Manager/Assistant Outlet Manager in enabling employees to achieve the highest service and product delivery standards, with a focus on client care and service excellence.
  • Provide exceptional service to guests, including order taking, menu promotion, and drinks service, ensuring a personalized and memorable experience.
  • Assist colleagues and guests efficiently and professionally, maintaining a positive and respectful attitude at all times.
  • Develop extensive knowledge of our food and beverage menus, including liquors and cocktails, to provide expert advice and recommendations to guests.
  • Offer menu options, advice, and take orders, ensuring accuracy and attention to detail.
  • Offer drinks, pre, during, and after meal service, maintaining a high level of service quality and consistency.
  • Remember guest preferences to extend personalized service, building strong relationships and loyalty.
  • Take guest orders accurately and assure correct input in the Point of Sales system, ensuring seamless execution and minimal errors.
  • Double-check order lists before sending tickets to the kitchen, ensuring accuracy and attention to detail.
  • Verify guest satisfaction with each table during each course served, addressing any concerns or issues promptly.
  • Use the guest name appropriately and communicate it to restaurant colleagues and managers, maintaining a high level of professionalism and respect.
  • Serve food in a timely and efficient manner, ensuring a seamless and enjoyable dining experience.
  • Arrange all tables following established standards, maintaining a high level of presentation and cleanliness.
  • Arrange and maintain all assigned side stations, continually stocking each station before and after every shift.
  • Maintain all silver and glassware polished, wiped, and spotless, ensuring a high level of presentation and cleanliness.
  • Keep all side stations clean at all times, maintaining a high level of hygiene and cleanliness.
  • Keep chairs and banquettes clean and clear of debris, ensuring a safe and comfortable environment for guests.
  • Mark tables appropriately to food and beverage orders for each course, ensuring proper delivery and minimizing errors.
  • Maintain that all product served is accounted for on the final bill before presenting it, ensuring accuracy and attention to detail.
  • Upkeep and clear tables between courses throughout the dining experience, maintaining a high level of presentation and cleanliness.
  • Pick up checks before guests leave and wish them a warm farewell, thanking them for their visit and ensuring a positive experience.
  • At the end of the shift, deliver all checks and reports to the appropriate place according to established standards, maintaining a high level of professionalism and respect.
  • Follow through on opening and closing duties, ensuring a seamless and efficient operation.
  • Adjust service to suit guests' requests and personalize any interaction with the guest, building strong relationships and loyalty.
  • Use a Heartist approach, making guests feel welcome, heart-warmed, incredible, and belonging.
  • Ensure service standards and individual performances are aligned with Accor Values - Guest Passion, Trust, Sustainable Performance, Spirit of Conquest, Innovation, and Respect.
  • Ensure NEA rules and regulations are met and achieved, maintaining a high level of compliance and professionalism.
  • Actively engage in upselling and add value, driving sales and improving efficiency.
  • Relay any guest complaints to the manager, addressing concerns and issues promptly.
  • Ensure efficiency of work in dish wash, pantry, and service preparations, maintaining a high level of productivity and efficiency.
  • Ensure cleanliness and work safety in food preparation and service areas, maintaining a high level of hygiene and cleanliness.
  • Carry out ad-hoc duties as assigned, including sending operating equipment for cleaning or burnishing on a weekly basis, sending soil linen for exchange for clean ones, and collecting Food and Beverage requisition on a daily basis.
  • Provide a Leading and Consistent Guest Experience
  • Promote sales through direct guest contact, driving sales and improving efficiency.
  • Constantly obtain guest feedback during operation, ensuring guest satisfaction and addressing any concerns or issues promptly.
  • Handle minor complaints and report to the managers for proper follow-up, maintaining a high level of professionalism and respect.
  • Build strong relationships with local guests and build a loyal following as a foundation for a successful operation.
  • Maintain levels of confidentiality and discretion of the guest, colleagues, and operator at all times, maintaining a high level of professionalism and respect.
Management and Leadership of Outlet
  • Act as a mentor and role model to the Food and Beverage Associates, providing guidance and support.
  • Proactive, innovative with in-depth Food and Beverage and market knowledge, driving sales and improving efficiency.
  • Observe colleague's individual performances, grooming, and punctuality and communicate with the managers accordingly, maintaining a high level of professionalism and respect.
  • Provide a high level of Safety and Security for guests and colleagues, maintaining a high level of compliance and professionalism.
  • Check daily opening and closing duties, ensuring a seamless and efficient operation.
Training, Learning, and Development of the Team
  • Conduct regular on-the-job trainings for colleagues to develop their skills and knowledge, maintaining a high level of professionalism and respect.
  • Assist in records and submit monthly On-the-Job Training hours to the Food and Beverage Office before the 15th of each month, maintaining a high level of compliance and professionalism.
  • Guide the departmental orientation for new hires, providing guidance and support.
  • Ensure that colleagues are aware of hotel rules and regulations, maintaining a high level of compliance and professionalism.
  • Ensure that colleagues are trained on fire and safety, emergency procedures, and hygiene, maintaining a high level of compliance and professionalism.
Qualifications

Candidate Profile

Knowledge and Experience

  • Certificate or diploma in hospitality or related field.
  • Minimum 2 years' experience in an international-class restaurant.
  • At least 1 year relevant experience in a similar capacity an advantage.
  • Additional improvement programs in Food and Beverage an advantage.
  • Working knowledge of Microsoft Office.
