JOB RESPONSIBILITIES

Deliver and Manage Food Standard and Quality

RESPONSIBILITIES

  • Ensure food is prepared and cooked according to the Standard Recipes and Operating Procedures.
  • Ensure all items prepared are plated according to the standard presentation in the Kitchen Manual.
  • Ensure food is prepared and cooked with the same level of quality and consistency.
  • Ensure proper labeling of food items after preparation.
  • Ensure the correct rotation by FIFO and maintain stock level of all food products.
  • Adhere to all statutory food hygiene and sanitation guidelines and ensure that the kitchen is well kept and maintained at all times.
  • Ensure the proper stocking of raw materials required for the kitchen.
  • Inform the Assistant Chef of all incidents of spoilage and damage to food products for recording in the Wastage Report.
  • Adhere to all statutory food hygiene and sanitation guidelines.

Manage Customer Expectations

  • Handle food issues/complaints effectively and manage customer satisfaction promptly and appropriately.
  • Constantly rectify and improve on food issues to manage and ensure customer satisfaction

Upkeep and maintain Cleanliness of the Kitchen

  • Ensure the kitchen is well-cleaned and maintained at all times.
  • Ensure all kitchen equipment are well-maintained and serviced regularly.
  • Manage and ensure the smooth running of the daily operations in the kitchen according to the company standards.
  • Assist in conducting on-the-job training for all cooks and kitchen helpers to ensure that they perform their duties according to the company standards.
  • Assist the Assistant Chef in maintaining the cooks' productivity by ensuring consistent training and development of culinary skills.
