**Your day to day**
voco Orchard Singapore is seeking a dynamic and creative Executive Pastry Chef to be part of its team. As Executive Pastry Chef, you will be leading a team of culinary professionals within the pastry and baking functions of the kitchen. You are responsible for the creation of the desserts and pastry menus across all outlets, inventory and purchasing of supplies, and cost control.
- Leads the pastry team while personally preparing all pastry, desserts and and bakery items for the hotel based on standard hotel recipe
- Regular inspects pastry displays across the hotel and ensures that all displays are appetizing and enticing for customers and guests
- Conducts quality checks to ensure items are of a consistently high standards and embracing changes to meet the needs of our guests
- Administer budgets for the pastry department and monitor all costs of food and labour.
- Purchases appropriate supplies and manage inventories according to budget.
- Maintains purchasing, receiving, food preparation handling and correct storage standards.
- Manage all bulk ingredients and ensure all fresh products are complying to all food safety standards.
- Maintain an inventory of all food and beverage products
- Plan or participate in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, market conditions, popularity of various dishes and frequency of menu
- Follows proper handling and right temperature of all food products.
- Maintain all sanitation procedures to maintain optimal raw products and ensure absence of any contamination.
- Provide direction and support to the team on a daily basis. Schedule employees to ensure proper coverage.
- Supervise and manage the performance of the pastry department.
- Assist the Executive Chef to facilitate the performance management cycle throughout the year
- Work closely with the Human Resources department in the recruitment of colleagues to ensure staffing are met
- Identify any training gaps and work with the Learning & Development colleagues to ensure training gaps are close.
- Keeps updated and applies the latest trends in the culinary and F&B industry.
- Perform other duties where required
**What we need from you**
- Diploma in Culinary Arts, with specialized training in pastry and bakery.
- You have minimum 10 years working experience in a fast moving kitchen, with at least 3 years in a similar position.
- Experience in an international hotel chain in a senior leadership position
- Valid Food Hygiene/ Food Handler certificate as required by local government.
- Oral and written fluency in English. Fluency in another language is an advantage
- Commitment to work rotating shifts, weekends and public holidays.
- Great communication skills, ability to interact with guests, employees and third parties that reflect highly on the hotel, the brand and the company.
