**JOB SUMMARY**
The Director, Restaurant & Bars - Luxury, APEC is responsible for overseeing Restaurant & Bars (R&B) and Quality Assurance for Luxury Hotels in Asia Pacific (excluding Greater China) Continent. The Luxury hotels in scope are The Ritz-Carlton (and Reserve), Bvlgari, St Regis, EDITION and W. Partnering with the respective Area Directors of Operations, the position oversees the development and implementation of R&B strategies and marketing initiatives. The position works to ensure the restaurant and bar operations meet luxury and regional goals, focusing on growing revenues and reputation while maximizing the financial performance of Asia Pacific (excluding Greater China) region.
**CANDIDATE PROFILE**
Education and Experience
- High school diploma or GED; 6 years’ experience in luxury food and beverage, culinary, event management, or related professional area.
OR
- 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 4 years’ experience in luxury food and beverage, culinary, event management, or related professional area.
- Previous similar experiences supporting luxury F&B above property position.
**CORE WORK ACTIVITIES**
Managing Operations
- Develops R&B operating strategies that are aligned with the region’s business strategy, luxury positioning and execution.
- In alignment with the Area Directors of Operations, supervises R&B operations and ensures compliance with all policies, standards and procedures.
- Supports Area Directors of Operations and property Directors of Food & Beverage within Asia Pacific (excluding Greater China) to ensure that guestVoice, brand standards, reputation and financial objectives are met.
Developing and Maintaining Food and Beverage/Culinary Goals
- Reviews financial reports and statements to determine how food and beverage is performing against budget.
- Makes recommendations for funding of food and beverage projects in accordance with continent strategy.
- Works with food and beverage leadership team to determine areas of concern and develops strategies to improve the guest experience department’s financial performance.
- Establishes challenging, realistic and obtainable goals to guide operation and performance.
Organizing and Managing Projects
- Organizing and managing the internal conferences and Training workshops/programs.
- Engaging with relevant industry partners and the property DFBs to elevate the F&B reputation by winning awards and credible accreditations/recognitions of the hotel brands in scope.
Leading Food and Beverage/Culinary Team
- Utilizes interpersonal and communication skills to lead, influence, and encourage others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example.
- Achieves and exceeds goals including performance goals, budget goals, team goals, etc.
- Ensures that regular, on-going communication occurs in all areas of food and beverage (e.g., Advisory Board)
Managing and Conducting Human Resource Activities, e.g. Workshops
- Provides guidance and direction to subordinates, including setting performance standards and monitoring performance.
- Assists that Area Directors of Operations in hiring food & beverage leadership team members who demonstrate strong functional expertise, creativity and entrepreneurial leadership to meet the business needs of the operation.
- Organizing Workshops
Pre-Opening Support
- Liaising with properties for on-site pre-opening support
- Arranging the countdown program and managing the task force
