**About the Concept**
We are launching a contemporary Japanese sushi bar inspired by Tokyo’s iconic standing sushi culture—refined, intimate, and built around the chef's craft. With just 20 seats in a U-shaped counter setting, the experience focuses on quality ingredients, storytelling, and efficiency. We are looking for a highly skilled **Head Sushi Chef**to lead the kitchen, design the menu, and deliver a memorable omakase-driven experience.
**Key Responsibilities**
- Lead all sushi and kitchen operations with full autonomy over food execution and presentation.
- Design seasonal menus and omakase courses with a strong understanding of ingredient sourcing and seasonality.
- Maintain the highest standards of hygiene, kitchen discipline, and food safety.
- Manage inventory, supplier relationships, and cost controls.
- Mentor and train junior chefs and apprentices.
- Represent the brand and engage with customers across the sushi counter during service.
**Requirements**:
- At least 7 years of professional sushi experience, including omakase or high-end sushi service.
- Strong knowledge of Edomae-style techniques, fish butchery, aging, and rice preparation.
- Proven leadership experience in running a sushi kitchen or omakase-style counter.
- Ability to work independently and build a kitchen team from the ground up.
- Comfortable with customer-facing interaction and explaining dishes across the counter.
- Bilingual ability in Japanese/English or Japanese/Mandarin is a plus.
