SUMMARY

The Assistant Pit Master supports the Pit Master in overseeing kitchen operations. This role involves supervising junior kitchen staff, ensuring food quality and hygiene standards are met, assisting in menu development, and contributing to a smooth and efficient kitchen operation.

RESPONSIBILITIES

  • Prepare and cook high-quality dishes in accordance with the menu and presentation standards.
  • Ensure consistency in taste, portioning, and presentation.
  • Monitor food quality and freshness throughout service.
  • Supervise and guide the Kitchen Supervisors and Line Cooks during food preparation and service.
  • Step in to lead the kitchen in the absence of the Pit Master.
  • Support staff development through on-the-job training and mentoring.
  • Assist in managing inventory and stock control, ensuring adequate supplies and proper storage.
  • Monitor food wastage and implement controls to improve cost efficiency.
  • Ensure kitchen equipment is used safely and maintained in good working condition.
  • Maintain high standards of hygiene, cleanliness, and food safety in accordance with company policies and local regulations.
  • Ensure all food items are labeled, dated, and stored properly.
  • Follow SOPs and participate in regular kitchen audits and inspections to ensure compliance with local regulations .
  • Contribute ideas to menu planning, recipe development, and food presentation.
  • Assist with tastings and implementation of seasonal or special event menus.

REQUIREMENTS

  • Proven experience in a similar role within a fast-paced kitchen environment.
  • Strong knowledge of kitchen operations and food safety standards.
  • Good leadership and communication skills.
  • Ability to work under pressure and maintain a calm demeanor during busy service periods.
  • Formal culinary training or relevant certification preferred.
