**Role**
- To supervise customer service elements - cut and prepare meat according to standards/customer’s specifications and to advise customers on cooking methods.
- To manage the freshness and quality of all meat on display are safe for consumption.
- Cut, trim, bone, tie, and grind meats, such as lamb, beef, poultry, and fish, to prepare meat in cooking form.
- Grind and mix meat according to recipes then stuff into casings to form sausages and bulk meat products.
- Using your butchery experience you will continue to develop fresh poultry and meat sales through maintaining high standards and by actively developing trade with new and existing customers.
- Use knowledge of scales, weight measures, and tares to accurately weigh and label meat products; including packaging and wrapping products and following the proper dating procedures.
- To sustain new initiatives/concepts initiated such as managing product range offerings, and executing promotions.
- Operate and perform meat-cutting functions including trimming, deboning, portioning, slicing, and processing according to specifications.
- To manage daily ordering and maintain the right range consistently.
- To plan and manage daily routine - weigh, pack, cut, trim, grind, and display meat in the service case and multi-deck chiller.
- To supervise the cleanliness of workstations and equipment, and ensure compliance with food safety and hygiene standards.
- Assist customers with special requests and answer questions about our meat products and services.
- To ensure maintenance of chillers’ temperature and functionality, and report on malfunction
- Responsible for delivering the store’s sales and net profit target.
- To manage unknown and known shrinkage effectively.
- Extract and prepare weekly analysis reports for submission to Senior Management.
- Receive, inspect, and store meat upon delivery, to ensure meat quality.
- Maintain required records including food production and inventory records.
- Achieve category sales, profit, and income goals and objectives by developing and implementing business plans for the assigned categories
- Develop, implement, and manage an optimum product mix that focuses on customers’ needs.
- Manage sourcing of the right products internationally, which fits the demands of local customers.
- You will need to be flexible, hardworking, and enjoy working as part of a team.
- Build and develop excellent customer relationships to encourage regular spending.
- Aware of Food hygiene standards & principles and able to work with them.
- Confident knife skills and the use of butcher's machinery (Band-saw, Mince Machine).
- Knowledge of traditional Asian cuts is preferred but not essential
- Minimizing any unnecessary waste and making the most out of each cut of meat
- Managing the meat and poultry waste.

**About You**
- Understanding about SOPs of the Halal meat process.
- Knowledge of and experience in a food-related retail store.
- Must have previously worked as a butcher.
- Ensure the HACCP program and all food safety and health department rules and record keeping are maintained. Follow all store and department policies and procedures.
- Process meat into various ready-to-cook and ready-to-eat Halal products, such as sausage, beef jerky, snack sticks, and marinated meats.
- Cut, trim, and prepare portions of meat for use or sale in other retail establishments for our wholesale customers.
- Package meat for retail sales and customer-specific orders. Cut, trim, bone, tie, and grind meats, such as beef, poultry, lamb, and fish, to prepare meat in cooking form.
- Grind, mix, and stuff meat to make a wide range of sausage and bulk ground meat products.
- Prepare special cuts of meat ordered by customers.
Good technical knowledge of Meat-cooking methods, and identification of various cuts.
- Proper sharpening and handling technique.
- Able to cut and process the various types of parent-to-child cuts.
- Able to operate all heavy machinery equipment.
- Physical work is required and able to carry loads up to 15kg.
- Able to work on a rotating shift, including weekends & public holidays.
- Minimum 5 years of experience in a similar role.
- Understanding of food safety & hygiene in a Halal environment.
- Comfort working with multiple stakeholders.

Education & Certification
- Any certification in Halal meat processing is a must.
- Degree in Business, Retail Management, or relevant discipline.
- Demonstrate proficiency in sawing, boning, cutting, trimming, grinding, weighing, setting up trays, and wrapping techniques.
- Sustain a high level of product knowledge and product preparation.
