BASIC FUNCTION
He is responsible for the proper and orderly functioning of all operations required to back up service of all food & beverage areas
DUTIES AND RESPONSIBILITIES
- He supervises assistant stewards, dishwashers, pot-washers, silver cleaners, expediters and kitchen porters. Hires and discharges the above, remaining fair and impartial at all times
- He assures that all new employees are adequately instructed in requirements of their jobs and that they are informed of house rules and policies
- He sees to it that prescribed procedures are adhered to and carried out in detail, correcting any deviations through constant on-the-job training
- He requires that all employees are punctual, properly groomed and dressed in their prescribed uniform
- He is responsible for the flow of china, glass, silver and other service-ware, making sure that adequate supplies are always on hand wherever and whenever needed. At the same time he makes sure that these items do not accumulate in any place where they will hinder operations
- He does not permit service ware or equipment to stray from the area for which it is designated
- The Chief Steward is particularly sensitive to the requirements of the banquet department and he keeps himself informed in detail of all forth-coming functions and works closely with the Executive Chef
- He is in charge of ware-washing and makes sure that all items are properly washed and sanitized. He pays special attention to the prevention of water spotted silver and cloudy glasses
- He assures that all silver is properly burnished and polished and is familiar with local sanitation law
- He is familiar with ware-washing systems and cleaning procedures and see to it they are followed
- He maintains the supply of china, glassware, silverware and speciality items, taking periodic inventories to determine their usage. He requisite replacement for these usages
- He sees to it that china, glass, other service items as well as all equipment are handled in such a manner as to prevent breakage and damage. Takes immediate corrective measures wherever he observes carelessness and mishandling
- It his duty to prevent the use of equipment for purposes it is not intended for either by house rule or by convention
- He is responsible for the cleanliness and orderliness of the kitchen and all adjacent areas during business hours
- He must be well instructed in the use of dishwashing, glass washing, burnishing and cleaning machines and food disposal units and able to instruct other in their proper use
- He is also familiar with various types of cleaning compounds and with their proper use. He must curtain their waste
- Makes sure that all waste is removed from the area under his supervision and that containers are properly cleaned and sanitized
- The staffing of the Steward’s Department will fluctuate with the volume of business and the Chief Steward must see to it that there are always enough employees at hand to assure that smooth flow of its duties while keeping labour costs to its minimum
- The Chief Steward accomplishes his many duties by delegating the actual carrying out of them to the assistant stewards to whom he assigns specific areas of responsibilities
**Key Job Requirements**
- Diploma in Tourism / Hospitality Management
- Minimum of 2 year(s) of experience in a similar capacity with proven track records
- Excellent reading, writing and oral proficiency in English language
- Proficient in MS Excel, Word, & PowerPoint
To be successful in this sought after role, you will demonstrate the ability to excel within a luxury brand.

Previous experience in a five-star environment is desirable, and above all else, pride yourself on ability to build relationships and guest experiences epitomising French elegance, style and sophistication.
