
Assistant Head Chef

HUONE Singapore is an extremely cool meeting space located centrally at Clarke Quay, occupying 22,500 sqft, with an adjoining restaurant and bar. The role of Assistant Head Chef is to work with our kitchen team and Head Chef to develop our seasonal menus, prepare existing menus, ensure quality control is managed to ensure optimal culinary experiences with us.
**Detailed Job Description**
- Preparation of buffet meals for guests mixed cuisine (Western and Asian). Meals include morning tea break, lunch, and afternoon tea break.
- Preparation on an adhoc / on indent basis plated meals, canapes, and bar bites
- Planning, preparation, for taste testing each new season's menu. New menus commence every 3 months.
- Oversee the kitchen when the Head Chef is not around.
- Ensure that planned menus match the planned costs (COGS)
- Sourcing and placing of orders from suppliers, and ensuring that we get the best value and payment terms
- Payment tracking for weekly costs review
- Should the Head Chef not be available, be present at each meal service at the restaurant area to ensure that the food presentation, quantity is sufficient, and cleanliness is maintained.
- Maintain the dressing and discipline of the kitchen team in the absence of the Head Chef.
- As a manager, be contactable should issues arise.
- Conduct surveys from guests on the floor for the taste and quality of the food, and be prepared to make immediate changes to the menu should there be valid concerns.
**Job Requirements**
- Minimum of 2 years of experience of preparing hot and cold dishes
- Must be able to work on weekends (off days will be provided for)
