
Hygiene Manager

Reporting to the Executive Chef, the incumbent will be playing a pivotal role in the development and institution of Safety and Hygiene standards in Culinary and Food & Beverage Service. In addition, he/she is to provide organizational and administrative support to the Culinary Department and the timely and efficient execution of assigned office and business procedures.
**Key responsibilities**:
- Develop, propose and implement Hygiene Standards for all F&B Outlets and Kitchens.
- Design and develop WSQ Follow Food & Beverage Safety & Hygiene Policies and Procedures.
- Prepare and facilitate WSQ Follow Food & Beverage Safety & Hygiene Policies and Procedures for all F&B Service and Culinary Colleagues during pre-opening.
- Develop and conduct competency assessment for WSQ Follow Food & Beverage Safety & Hygiene Policies and Procedures for all F&B Service and Culinary Colleagues during pre-opening.
- Conduct periodic WSQ Follow Food & Beverage Safety & Hygiene Policies and Procedures for all new joiners including part-timers and casual labour and refresher programmes for existing F&B Service and Culinary Colleagues.
- Develop and conduct Workplace Health & Safety programmes for all colleagues.
- Conduct monthly audit and ensure all F&B Outlets and Kitchens including but not limited to receiving and stores; compile fully to legal requirements on food safety and workplace safety.
- Prepare and report Safety and Hygiene Compliance Index on a monthly basis, highlighting strengths and major areas of non-conformance; and recommend actions to be taken by respective stakeholders.
- Conduct investigation into food-borne complaints and report findings on a needs basis.
- Plan, prepare and ensure designated kitchens are HACCP certified, and ensure standards are maintained if not, exceeded.
- Co-ordinate and act as a liaison person for all external auditors relating to food safety and workplace safety for F&B Outlets and Kitchens.
- Develop and document all Health and Hygiene related policies and procedures, and standards and ensure that the contents are current.
- Provide administrative assistance to Executive Chef and Culinary colleagues as and well needed.
- Perform any other tasks and duties as assigned.
**Requirements**:
- Diploma/Advanced/Higher/Graduate Diploma in Hospitality/Tourism/Hotel Management or equivalent.
- Comprehensive knowledge in hygiene practices and processes.
- Minimum 3 years of relevant working experience, preferably from a luxury hotel environment.
- Relevant Food Science or Hygiene Related Certificates
- Proficient in the use of MS Office.
- ACTA certified preferred.
