**Summary**

This position is responsible for the supervision of the work of a team of kitchen personnel, thereby maintaining high standards of food preparation and service in the kitchens.

**OPERATIONS**
- Oversee kitchen operations for Chinese cuisine, ensuring smooth workflows for events, functions, and daily operations.
- Collaborate with the Executive Sous Chef and Executive Chef on menu pricing and adjustments.
- Ensure all Chinese dishes are prepared with consistent taste, temperature, quality, and presentation
- Monitor inventory and ensure proper storage of ingredients and perishables.
- Prevent the use of contaminated ingredients and prohibit ill staff from handling food.
- Inspect and ensure all kitchen equipment is in proper working condition
- Lead and train team members in Chinese cooking techniques and standards.
- Actively contribute ideas during menu planning and operational discussions to enhance overall kitchen performance.
- Manage kitchen operations for events and functions, ensuring timely and high-quality delivery of dishes.
- Enforce compliance with safety, health, and loss prevention policies and government regulations.
- Consistently deliver exceptional dining experiences by maintaining high culinary standards.
- Maintain strict control over food quality, appearance, and portion consistency
- When there is no Chinese event, he/she will assist in other kitchen operation allocate by Executive Sous Chef or Executive Chef.

**TEAM MANAGEMENT**
- Inspire, supervise, and discipline team members to ensure they maintain high levels of professionalism and meet guest and organizational standards.
- Interview, select, and recruit skilled kitchen team members specializing in Chinese cuisine.
- Identify and nurture team members with potential, guiding them toward growth and career development.
- Conduct regular performance reviews with team members, providing constructive feedback and setting clear goals.
- Develop and deliver training programs tailored to the unique skills required for Chinese culinary techniques, focusing on team development and adapting to evolving business needs
- Prepare weekly staff schedules, balancing anticipated business levels, budget constraints, and the need to maintain consistent service standards.

**Other Responsibilities**
- Be well versed in hotel fire & life safety/emergency procedures.
- Attend all briefings, meetings and trainings as assigned by management.
- Maintain a high standard of personal appearance and hygiene at all times.
- Perform other reasonable duties assigned by the Management.

**Qualifications / Requirements**
- Minimum 3 years’ experience in a similar capacity
- Strong passion for creating authentic, modern, fusion cuisine.
- Able to work under pressure.
- Possess good leadership and supervisory skills.
- Able to work in a fast-paced environment, with a keen eye for quality control.
- Good communication and customer contact skills.
- Knowledge of food and health safety standards including HACCP.
