Overall in-charge of the operations in the JR Central Kitchen, ensuring the preparation of high quality meals in accordance to company standards, menu specifications, and production schedules while meeting required safety, hygiene and quality standards.
- To lead and manage the JR Central Kitchen team to achieve production goals, productivity and profitability KPIs set by the Management.
- Work closely with the Executive Director, Culinary Director, Production Head Chef and Line departments in the pursuit for continuous improvement in products, menu items and promotions.
- To plan, establish and maintain an optimum “lean” operational structure within the JR Central Kitchen, so as to ensure the effective and efficient running of the Central Kitchen.
- To plan, supervise and implement food manufacturing/production procedures in accordance with required Quality Assurance methods, new technologies, organization strategies and budget.
- Supervise all the Central Kitchen staff to ensure production targets, portion sizing, product quality and specifications are met.
- Responsible for formulating new food production standards and Standard Operating Procedures (SOPs).
- To investigate production/quality issues in the kitchen and to recommend solutions.
- To ensure that all resources are optimally utilized, monitor to ensure mínimal over-production and wastages and recommend ways to reduce waste production.
- To ensure all food safety and quality measures (HACCP / ISO) are in place and adhered to by all Central Kitchen staff and to ensure that all staff are compliant to the safety, hygiene and sanitation procedures at all times.
- Conducts, coordinates and supervises the inventory at the JR Central Kitchen. Maintain stock inventory appropriately and ensure that all storage areas are tidy and all products are stored appropriately.
- To establish a clear succession / career development plan for the Central Kitchen staff in the respective work area and/or functional work responsibilities within the JR Central Kitchen.
- To act in the best interest of the company in all circumstances.
- Any other appropriate duties and responsibilities as assigned.
**Job Requirements**:
- Bachelors’ Degree in Business Management or relevant field
- 3 years of prior experience and knowledge in production planning and managing production operations
- Experience in F&B manufacturing industry is preferred, familiarity with F&B certifications and local regulation (SFA, NEA etc.) will be advantage
- Highly driven and motivated individual, works well independently
- Strong written and verbal communication skills, able to interact effectively with both internal and external stakeholders
- Excellent problem-solving skills with strong attention to detail and ability to think strategically
- Good planning, organization and project management skills
- Proficiency in MS Office
